Sehri and Iftar refer to the meals of the day during Ramadan. Sehri is in the morning and is consumed before Fajr prayers. Iftar is the (usually lavish) evening meal. Iftar starts simply with a few dates and water or juice. Practicing Muslims then attend Maghrib prayers before getting on their festivities, thus allowing their stomachs to prepare for the quantities of food that will soon fill it.The term roza refers to the time period that individuals fast. There will be thirty days or thirty periods of roza in Ramadan unless the moon is difficult to see.
The term fiqh refers to Islamic jurisprudence, or (from what I understand) man-made laws. More people are familiar with the term sharia, which is meant as divine law, and thus are not man-made. There is a lot of debate by common people and scholars it seems over what laws are specifically fiqh or sharia. In any case, there are multiple well-established methods under sharia for practicing Islam and these in turn are called the schools of fiqh. The time table refers to Hanfia (Hanafi) and Ja'Afriya schools of fiqh, which are from the largest (Sunni) and second largest (Shia) denominations of Islam respectively.
